Description of the methods used to collect and generate the data: Female Wistar rats were housed under controlled conditions (22 °C; 12-hour light/dark cycle) and fed a standard chow diet. Animals were distributed into young (2 months) or aged (21 months) groups. A subset of aged animals received GSPE (500 mg kg−1, oral gavage) for 10 consecutive days, followed by a 75-day wash-out. After a 12-hour fast, animals were sacrificed and plasma plus intestinal segments (duodenum, jejunum, ileum, proximal colon, distal colon) were collected. Gene expression of Tas2r receptors was quantified by RT-qPCR in intestinal samples. Ex vivo intestinal permeability was assessed using TEER and FITC-dextran flux assays. Enteroendocrine outputs and inflammatory markers were quantified. Plasma biochemistry and plasma metabolomics were measured, and gut microbiota profiles were obtained by 16S rRNA sequencing (genus-level data provided for analysis). Ethical approval is reported in the related publication. 2. Data processing methods: Raw measurements were integrated into a single wide-format Excel table.
