Molecular study of the mechanisms of oenococcus oeni involved in its adaptation to wine conditions and in the development of malolactic fermentation

    Abstract:
    The objective of this thesis was to perform a comprehensive study, both transcriptional and functional, of O. oeni genes and proteins involved in its adaptation to wine conditions and in the development of the MLF. A transcriptional relationship between the level of expression of certain genes and particular conditions of the culture was observed. We have also studied the first time in red wine, the expression of one gene that encodes the enzyme β-glucosidase. We have also found that several proteins are affected after 12% ethanol shock. These are proteins related to protein biosynthesis and stability and cell envelope biosynthesis. These results contribute to a better understanding of the mechanisms related to the physiological response of O. oeni during adaptation to wine conditions. Also, the link between the behavior of genes and proteins for cell growth under these conditions provides information for the characterization of strains with oenological interest.
