    Abstract:
Nuts contain unsaturated fatty acids susceptible to oxidation, but also contain antioxidants, which could counteract their prooxidant effect. This thesis shows that in healthy mice, consumption of feed enriched with whole nuts or walnut skins, produced no adverse effect on plasma lipid peroxidation despite the observed lower plasma antioxidant capacity, compared to the control group. In addition, a clinical trial, 12-week randomized intervention in adults with metabolic syndrome was observed that consumption of a mixture of nuts in the context of a healthy diet did not produce deleterious effects on capcidad antioxidant, peroxidation lipid and endothelial function, in comparison with the consumption of the same healthy diet. In addition, nuts could contribute to reduce oxidative damage to DNA, oxidative marker related to the presence of some chronic degenerative diseases. These results suggest that eating nuts in the context of a healthy diet could prevent the risk of chronic degenerative disease and their comorbities.
