Soy Protein-Based materials for encapsulation and delivery of bioactive compounds

    Abstract:
    Soy protein isolate (SPI) is mainly a mixture of globulins. In aqueous environment, these exist majorly as globular molecules consisting of a hydrophilic shell and a hydrophobic kernel. Hence, it gives soy protein particles an advantage in encapsulation of hydrophobic drugs. In this bibliographic review, most recent research for delivery of bioactive compounds is discussed. The results show great encapsulation efficiency, thermal and storage stability as well as resistance to acidic environments with different soy protein blends and shapes. SP makes up a competitive product given that is low cost, biocompatible and animal-friendly.
