    (Poly)phenols are secondary metabolites of plants that reduce the risk of chronic human diseases by protecting cell constituents against oxidative damage acting as antioxidants. The bioavailability of these compounds differs depending in the food matrix they are included in. Because of this, (poly)phenol extracts have been gaining popularity, as their concentration is higher, and the matrix effect is reduced
