    Abstract:
    The present study is a draft for a Cava Winery and dimensioned according to the production of 12.83 hectares of organic vineyards to produce a sparkling wine of good quality and ecologic to give an added value to the grape of this terrains. The draft defines all the processes and technologies needed from the entrance of the grapes in the cellar, through the production and processing of the product to obtain a sparkling wine suitable for sale, taking into account the quantities of product to produce, income from wine and raw material needs and personal. The draft analyzes and ensures through an economic study the feasibility of the investment and the production process considering the benefits obtained through the sale of their products and Cava and all fixed and variable costs, as well as depreciation of machinery and civil works. All these parameters allow to analyse the cash flow to determine the feasibility of the project.
