    Abstract: Wild yeasts fermented beers, Saccharomyces or not, as well as the utilization of proximity products, are two of the growing trends in the craft beer world. The purpose of this study is to isolate microorganisms from the agricultural surroundings of Lo Vilot, which can perform beer wort fermentations. To accomplish this purpose, a few worts had been left to spontaneously ferment in two places (a barley field and a hops field) with different treatments (acidification, addition of hops and a non-treated control). Spontaneously fermentations were tracked and a periodic counting of microorganism’s population was done. Yeast was cultured on YPD + chloramphenicol (0,01%) and bacteria was cultured on YPD + natamycin (0,01%). Selective or differential media had been used in order to isolate and identify these microorganisms. Moreover, isolated yeasts had been identified at specie level throughout the amplification and restriction of 16S ribosomal DNA region. In addition, and also with the aim of identifying yeasts species, biochemical tests were performed, such as a metabolism test. Finally, sugar attenuation ability of isolated yeast was studied by controlled fermentations. Two Saccharomyces cerevisiae strains were isolated by the mentioned methods starting from most populated and aromatic worts. One of this strains was able to reach a sugar attenuation of 60,67 ± 0,18%.
