Metabolic consequences of consumption of fruits from different origins and in different photoperiods: impact on the lipidic metabolism

    Nowadays, we have access to food products from all over the world, at any time of the year. Specifically, we have access to fruits and vegetables typical from other places, without knowing the consequences that this produces in the organism. In this sense, plants have a characteristic phytochemical composition that depends on the environmental conditions where it grows. These biocomposites provide signals for the heterotrophs that consume them, so that they can adapt favorably to the essential conditions of the environment. In addition, the number of hours of daily light impacts metabolism, through the modulation of gene transcription of certain enzymes. In this thesis, the effect of chronic exposure to different hours of light was evaluated, as well as the effect of the consumption of cherries and tomatoes from different geographical origin and in different photoperiods, simulating different seasons of consumption. Specifically we evaluated the impact on serum and liver metabolic parameters, on the expression of enzymes related to lipid metabolism and on the profile of fatty acids in liver and muscle. We have observed that both the origin and the photoperiod of consumption have differential effects on the parameters evaluated.
