Diseño y evaluación de una propuesta didáctica para el desarrollo de la competencia en alimentación en Educación Secundaria

    Resumen:
    This doctoral dissertation is based on the need to improve the teaching-learning of food and nutrition in Secondary Education. Firstly, the current situation of the teaching-learning process of nutrition is analyzed. The results obtained show that nutrition education through textbooks is not favoring meaningful learning or the development of skills and competences in students. Moreover, this knowledge does not translate into the acquisition of healthy habits. Subsequently, Obesity, a didactic proposal designed for the development of food competence in Secondary Education, has been designed. The main objective is to promote the acquisition of knowledge in food and nutrition through the development of cognitive skills. For this purpose, student-centered methodologies supported by ITC resources will be used. The implementation of this strategy has been approached through a case study in a 3rd ESO classroom and has allowed an evaluative research of Obesity for its subsequent optimization. For the evaluation of the proposal, quantitative pre-test and post-test content evaluation questionnaires were designed, as well as qualitative questionnaires for the evaluation of the proposal. The results indicate that Obesity is an adequate didactic resource to develop cognitive skills in students and, ultimately, to develop food competence. Even so, it requires modifications and adaptations that improve the results and allow it to adapt to the new educational legislation LOMLOE. However, this work has highlighted the difficulties of teaching food in the classroom, both educationally, socially, institutionally and politically.
