Resumen:
The aging of the population accentuates the increase in the prevalence of sarcopenia. The main objective of the thesis is to analyze the relationship and/or effects of diet and socioeconomic factors in the improvement of sarcopenia parameters, and to propose new strategies to evaluate the quantity/quality of muscle mass and establish new cut-off points to improve the accuracy of the diagnosis of sarcopenia. In addition, implement the use of participatory research to increase the adherence of the elderly to lifestyles recommendations. The studies carried out concluded: 1) A systematic review and meta-analysis of observational studies determined that unfavorable socioeconomic factors are risk factors for malnutrition in the elderly. 2) A co-creation study increased the adherence to lifestyles recommendations to improve sarcopenia parameters and it had been applied to the FOOP-Sarc study. 3) A systematic review and meta-analysis determined the association between the consumption of foods rich in antioxidants and the improvement of muscle strength and physical performance, as sarcopenia parameters. 4) A systematic review and meta-analysis determined that probiotic supplementation improves muscle strength and physical function, as sarcopenia parameters. 5) A cross-sectional study proposes the evaluation of the quantity and quality of muscle mass with bioimpedance, isokinetic and ultrasound and proposes possible cut-off points to improve the diagnostic accuracy of sarcopenia in elderly people with probable sarcopenia. In conclusion, the relationship and/or effects of diet, socioeconomic factors, the use of participatory science, and new strategies to assess the quantity and quality of muscle mass to improve the accuracy of the diagnosis of sarcopenia are evidenced.
