    This study was conducted to evaluate whether diets rich in oleic acid could result in HDL3 particles with greater resistance to oxidative modification compared with a linoleic acid enriched diet, as it has been observed for LDL.Plasma LDL and HDL3 were obtained from 22 healthy monks aged 53.7  3.1 years (mean  SE), who were randomly assigned to a 32-wk crossover study of a variant of sunflower oil containing more than 80% oleic acid (oleic acid diet) compared with conventional sunflower oil containing 67% linoleic acid (linoleic acid diet). The two diet test periods of 8 weeks each contained 38% of total calories as fat respectively. HDL3 isolated after the oleic acid diet were enriched in oleic acid in phospholipids. LDL and HDL3 obtained after the oleic acid diet were remarkably resistant to oxidative modification. Plasma lipids, lipoproteins and apolipoprotein (apo) B concentrations showed no differences after the two diets, but higher levels of apo A-I and A-II were observed after the oleic acid diet. LDL and HDL3 composition, fluidity and vitamins E, A and + tocopherol concentrations were not significantly different between the two diets. Competition studies with 125I-Ox LDL in macrophages were similar after the two diets. The capacity of HDL3 to induce [3H]free cholesterol efflux from fibroblasts and macrophages also showed no differences after the two diets.These results suggest that, like LDL, HDL3 rich in oleic acid are protected against oxidation, the resistance of these lipoproteins to oxidation being mainly determined by their oleic acid content This study demonstrates the feasibility of a diet rich in oleic acid as an attractive way to cardiovascular dietary prevention.
