    Abstract:
    Cardiovascular diseases are the leading cause of mortality among non-communicable diseases globally. Current evidence highlights diet as a significant modifiable factor in reducing cardiometabolic risks. However, the complexity of diet's impact on health arises from its multi-faceted nature, encompassing nutrients, chemical contaminants, endocrine disruptors, processing levels, additives, food matrix, and sustainability.This doctoral thesis aimed to: 1) assess the association between Nutri-Score Nutrient Profiling System (NS-NPM) dietary index and cardiometabolic risk factors in elderly individuals with overweight/obesity and metabolic syndrome, 2) evaluate the ability of the 2015 and 2023 NS-NPM to discriminate food consumption and nutrient intake in French children and adolescents, 3) examine the relationship between ultra-processed food (UPF) consumption and cardiometabolic risk factors in Spanish preschoolers, and 4) investigate the association between dietary intake of endocrine disruptors (PCDD/F and PFOS) and cardiometabolic risk factors in an elderly Mediterranean population.
