    Resum:
    The main object of study in this thesis, focuses on how the representations created, the speeches and the knowledge built around a total social fact, such as food, in the context of a country as Tunisia, highlights the existence of an hegemonic model similar to the Western pattern which, by a power device, invisibilise other knowledge or local food ways by turning them in 'absent'. The present paper is in line with a particular temporal context, at the present time of globalization, but also affects the previous diachronical process, such as the colonization and postcolonization, because the historical aspect is essential to understand the current dynamics of the country. In this context, we propose a comparative analysis to study the differential impact that this global phenomenon has had both in urban and rural areas of the country, bearing in mind the strategies that the individuals developed to face them.
