Identification of serin type protease inhibitors with inmunonutritional potential in wheat (triticum durum) and quinoa (chenopodium quinoa)

    Abstract:
    Cereals are the most consumed food in the world for their nutritional value, high production yield and low cost. However, the globalization and the social development have awakened the interest in searching for novel foods that promote health, as pseudocereals. One example is quinoa (Chenopodium quinoa), which has and advantageous nutritional profile. Cereals have received clinical attention due to his participation in different inflammatory and allergic pathologies. In wheat they have been identify inmunonutritional compounds, in the globulin fraction, with protease inhibitory activity (SETIs) with the ability to activate the innate immune response through the innate immune receptor type Toll (TLR)-4. Nowadays, for the quinoa there is no bibliography available on the matter, although globulins represent a significative fraction. The SDS-PAGE analysis of the globulin fraction of Chenopodium quinoa and Triticum durum in this study has shown electrophoretic marks between 6-70 kDa, molecular size described for SETIs. The fractionation of the molecular masses reveals that the highest SETI activity in quinoa is the 30-50kDa fraction, whereas in wheat is in the 14-30 kDa fraction. The estimation of protein bioaccessibility of the samples suggest a bioaccessibility of the 53% in the quinoa extract and of the 20% in the T. durum extract. Nevertheless, the SETI activity in similar for both samples (14-18%/mg protein). These results confirm the dietary contribution of SETIs from quinoa and wheat, while these are partially resistant to gastrointestinal digestion.
