    Abstract:
There is an interest for the consumers to know the origin of the food products and the health benefits that in some cases can be associated to the geographic origin. The main objective in this work is to differentiate and classify samples of extra virgin olive oil from the Arbequina variety of two Catalan certificates of origin (Garrigues and Siurana) and a third group of samples from the south of Spain (Andalucía and Murcia), called Sud Espanya. This work has been done during the period of the Final Degree Project of the Chemistry Degree of the Rovira i Virgili University (URV) and the samples have been analysed in the Catalan Institute of Chemistry Investigation (ICIQ) using Raman spectroscopy with Fourier transform as experimental technique. The classification methods used have been Soft Independent Modelling of Class Analogy (SIMCA) and Partial Least Square-Discriminant Analysis (PLS-DA). A SIMCA model and a PLS-DA model have been established and validated with 3 quality parameters, the sensibility, the specificity and the inconclusive percentage. The best results have been obtained doing a variable selection and the obtained values have been >95% (sensibility), >85% (specificity) and <20% (inconclusive) for the both SIMCA and PLS-DA models.
