Abstract:
This project deals about the construction of a frozen croissant production plant. The croissant is a food product made basically with flour dough or not, stuffed or not, whose main ingredients are flours, oils or fats, water, sugar, salt or not, with or without yeast, to which additives can be added. The industry is located in an industrial estate called Casa Nova in the municipality of Santa Margarida i Els Monjos (Vilafranca del Penedes). The reason for the location is the flour availability of the Harinera Vilafranquina factory. The design of the process is based on the production of 1,500 tons of croissant per year. In the industrial area there are two refrigeration chambers, one for the storage of frozen croissant and another chamber for the storage of margarine. The croissant is packaged in a bag format with a net weight of 800 g. The raw materials for production are flour, water, sugar, salt, yeast, improver and margarine. The croissant is obtained by dough worked with margarine, that is superposed in thin layers and finally frozen a spiral freezer. The construction of the structure of the industrial area is made with metal frames and prefabricated concrete enclosures. In the industrial area are necessary water, lighting, electricity, air conditioning and fire-protection, designed according to current regulations. In this project a correct management of the waste of work has been carried out, classifying them according to the Catalan waste agency. Finally, the total budget and a financial study have been estimated, concluding that it is an economically viable project.
