    Abstract:
    Every day, we eat food from animal and vegetable sources and it’s essential that these foods are of high quality, both those that we eat and those that eat the animals, because it could affect us. For this reason, it’s important to control what we eat and what animals eat, because some substances can affect our organism or that of animals, such as mycotoxins who are produced by some fungi. Mycotoxins infect food in the processing phase, if they are produced a high concentration, they will cause us acute and chronic effects to our body. On the other hand, we will develop a method that will quantify some of the most important mycotoxins. Consequently, we will try to validate this method with liquid chromatography tandem mass spectrometry instrument
