    Abstract:
    The aim of this project is to define the technical and economic bases to carry out the construction of an artisanal yogurt production plant from goat milk in the municipality of El Perelló (Tarragona). The plant is in the north of the Pla de Solans industrial park with a constructed area of 403 m2, where 62000 kg of milk are processed and approximately 480000 units of yogurt are produced per year. Two products are made in it: natural yogurt and yogurt with honey, under the distinctive quality seal “Llet de cabres catalanes” created by the Associació de Ramaders de Cabrum de Catalunya. It helps the goat sector and ensures milk with higher standards to those of current regulations. The project describes the sizing of all the facilities necessary for the proper development of the activity: plumbing, sanitation, lighting, cold, electricity and fire protection. Furthermore, the recovery of the investment is determined through a financial evaluation.
