    Abstract:
ABSTRACT In the present study we have compared two analytical methods for the determination of total xanthophylls. We have performed a detailed analysis of changes in the composition and quantity of carotenes and xanthophylls a sample. The extracted pigments were separated and identified by spectrophotomety and chromatography. The identified compounds were β-carotene, trans-lutein, zeaxanthin and lutein isòmers cis. The most abundant compounds were lutein (91%) and zeaxanthin (5%). Pigment stability in the extract with respect to temperature, illumination (light and darkness) and antioxidant addition was evaluated (BHT). The statistical results show that the determination of total xanthophylls for both methods are not significant different for a value of α = 0.05 . However, for total carotenoids results were not comparables.
