Abstract: We determined the effect of the addition of a commercial mannoprotein extract on the viability of two strains of O. oeni when under stressful conditions. To do this, a viability study was performed after subjecting the growths to pH, ethanol and low temperature stress in addition to analyzing the final starch content and the expression of carbohydrate transport and stress response genes .
