Study of technological, phenolic and aromatic maturity in Garnatxa negra and Cabernet Sauvignon varieties

    Abstract:
    The study evaluated the ripeness of Cabernet Sauvignon and Grenache Negra grapes for wine production. Adverse weather conditions, such as heat waves and low rainfall, caused early ripening and a decrease in the yield of the vines. Trends were observed in the technological, phenolic and aromatic maturity parameters of the grapes. The rains and the freezing of samples affected some parameters, especially in Garnatxa Negra. The analysis of the volatile compounds allowed a more precise characterization of the ripening state of the grapes. This study highlights the importance of climatic conditions in wine production.
