Abstract: The Spanish microbrewing industry is growing at a vertiginous speed all over the country, and as such, head brewers' concerns about the quality of the beer are rising. To create a quality product, total control over everything from the raw materials to all the brewery processes involved in bringing the beer to the consumer must leave nothing to chance. “Les Clandestines de Montferri”, based in Tarragona, is a microbrewery which is highly focused on surpassing quality standards, for which various analyses have been performed: the mineral composition of the brewing liquor has been determined, also examining the changing composition from previous years, to be able to subsequently adjust the various recipes. To the same end, a yeast re-use analysis has been performed to determine the necessary pitching rate, and study the viability and contamination of the yeast samples. The milling process had been analysed via sieve retention systems. Lastly, the increases in dissolved oxygen during the bottling of the beer have been. studied.
