Abstract: This work seeks the comparation of two different types of technologies for filtering the mash, having has key technology the “mash filter”, an equipment widely used in big breweries because of its advantages over lauter tun technology, while being relegated in microbreweries and medium size breweries because of its high cost. Moreover, it is intended to evaluate if the mash filer technology could be profitable small scale, where lauter tun technology is more widespread In order to do so, we need to evaluate the different steps that could be influenced by this technology change, as well as the necessary equipment to make it operational. Calculations were also made in which the efficiency of filtering by mash filter is checked in different ways.
