    Abstract: This analytical study of breweries consists of a compilation and analysis of data from an interview conducted with 10 different breweries throughout central Spain, including Madrid, Toledo and Segovia. The questions focused on 4 main categories: equipment, methods, raw materials and global vision of the brewery. It aims to overview the practices of the craft beer sector in a specific region. This study is a continuation of the work done by Alvaro Mayordomo Martínez, completed in 2020 in Cataluña and Valencia.
